I’ve resurrected a dessert I used to eat when I did the South Beach Diet yeaaaarrrsss ago. I told my friend Jen at Writeous Chicks about it and now she’s hooked, too. In fact, she told me she’s considering having it for breakfast (nothing wrong with that!)
Here’s the super simple recipe that can fulfill your craving for something sweet, but with NO added sugar!
1/4 cup Part Skim Ricotta (up to 1/2 cup, which I do)
1 Tsp unprocessed cocoa powder
1/4 tsp vanilla extract
1/8 tsp sweetener like stevia or xylitol
*Please note these are all approximations. I never use measuring spoons*
Mix all together and enjoy! Tastes just like chocolate pudding!
